Baked sweet potato crisps – Recipe 21st January 2017

Hope you are all having a fab weekend.

Weekend time means munchies time! I know a lot of people who are amazing with their diet and lifestyle during the week and unfortunately things just tend to fall by the wayside on the weekend where we feel we need to “reward” ourselves with things that aren’t the best for us (myself included!).

That means I’m constantly trying to come up with ways of making snacks that little bit healthier…one of the big healthy food trends for 2017 is more and more varieties of vegetable crisps cropping up in the supermarkets and health shops. Think kale, broccoli, parsnip, sweet potatoes… These are a great convenient snack if you are on the go and get an attack of the munchies but if you have a little time this weekend why don’t you try and make your own?

Here is my recipe for sweet potato crisps:

Ingredients:

1.Sweet potatoes – I used two medium sweet potatoes which was enough for a portion for 2
2.Olive oil – 1-2 tbsp
3.Rock salt
4.Smoked paprika (not necessary but I’m a bit of a smoked paprika fiend)

Method

1.Preheat the oven to 180 degrees celsius

2.Cut the sweet potatoes super thin and as uniformly as possible – the thinner they are the crispier they will turn out

3.Coat the crisps in oil

4.Sprinkle liberally with rock salt and smoked paprika (if you are using it)

5.Arrange on a baking tray ensuring all crisps have adequate room to bake

6. Once oven is hot place on the middle section

7.I’ve done these a couple of times and the cooking times can vary. So make sure to check them after 10 minutes. Rotate the oven tray around and move the crisps around to ensure all of them are getting the same amount of cooking time. The ones on the edges can tend to burn a little quicker than the ones in the middle.

8.Once you are happy with the crispiness remove from the oven. Some of them might feel a little soft so make sure to let them cool before diving in.
